Meatless Recipe: Scrambled “Eggs”

I am not confident in posting about recipes and such. I love cooking don’t get me wrong, but I just have no talent in food styling. It seems that I will not do any justice to the meal I cook, because if it tastes delicious it surely will look like crap, thanks for my barely there talent in food styling. But this time, I am so wanting to share a super easy recipe for when you feel lazy to cook elaborately.

We eat meatless a couple of times in a week. We mostly make salads, or omelet. Or just eat fried rice (nasi goreng) or noodle with wok vegetables and vegetarian meat (made from corns). This time I would like to share a mundane recipe of vegan food, scrambled eggs. Of course, it wasn’t from real eggs, instead I made it from tofu. Check it out for the ingredients, below:

  • Tofu
  • 3 – 4 tbs nutritional  yeast flakes (I bought them at an organic food shop)
  • a lemon
  • 2 pieces of spring unions, cut the white parts only
  • 1 piece of tomato, minced
  • 3 sprigs of celery leaves for garnishing
  • 3 cloves of garlic, minced

Spice blend:

  • 1/4 ts saffron
  • 1/2 ts ground cumin
  • 1/2 – 1 ts ground turmeric, if you use more than 1 tbs it will taste a bit too bitter
  • dried chilli flakes
  • 2 fresh red peppers, chopped
  • salt and pepper

First, you scramble the tofu and mix it with the yeast flakes thoroughly, until it looks like this:

Second, stir the spice blend together in a small cup. Add water and mix. Set aside.

Preheat a large, heavy bottomed pan over medium high heat. Saute the garlic in olive oil for about a minute. Toss the tofu mix in the pan, and saute for about 5-10 minutes, using a spatula to stir it. Get under the tofu when you are stirring, scrape the bottom and don’t let it stick to the pan, that is where the good, crispy stuff is. Use a thin metal spatula to get the job done, a wooden or plastic one won’t really cut it. when the tofu dries out you can add some lemon squeezes or olive oil. Add the spice blend, and minced tomatoes then mix to incorporate. Then, add the nutritional yeast, spring unions cuts and fresh black pepper. Cook for about 5 more minutes. The yeast will act as a substitute for cheese, so you can sprinkle it as much as you want.

  1. You did good Oppie! Nice recipe. May I repost this on my foodblog? 😉 about foodstyling, yoy will get there. It takes time & a lot of practice. Currently I have been into light mediterranean inspired vegan salad: couscous, cucumber, raisins, scallion, tomatoes & coriander leaves, drizzled with olive oil & lemon dressing. So simple but yet nutricious & easy to make. Eet smakelijk!

    • Aduh maluuu! :p ja natuurlijk, ga je gang hoor. kadang aku ganti seledri sama peterselie. Iya nih mbak, mesti banyak latihan nih hiks! Hmmm, mediterranean salad is really yummy indeed 🙂 aduh jadi laper..
